Mustard Dressing

Ingredients

  • 20g olive oil
  • 20g seeded mustard
  • 40g orange juice
  • Salt and pepper

Method

  1. Squeeze orange
  2. Combine the orange juice, olive oil and seeded mustard
  3. Add salt and pepper to taste

Tahini & Soy Dressing

Ingredients

  • 20g soy sauce
  • 10ml tahini
  • 1 tbs water

Method

  1. Mix all ingredients into a smooth paste (goes well with Asian food, similar to satay sauce).

Tahini Yoghurt Dressing

Ingredients

  • 10ml tahini
  • 1 tbs water
  • 8g honey
  • 125g greek yoghurt

Method

  1. Mix the tahini, honey and water together to make a paste
  2. Add in the yoghurt and season if desired. This is great as a savoury dressing on vegetables and also as a dip for sweet foods such as apple and banana

  • 50g natural yoghurt

Spicy Yoghurt Dressing

Ingredients

  • 100g natural yoghurt
  • 15ml hot chilli sauce (avoid sweet chilli as its packed full of sugar)
  • Squeeze lemon juice

Method

  1. Combine yoghurt and hot chilli sauce
  2. Add squeeze of lemon juice and stir
  3. Add salt and pepper to taste

Basil Pesto

Ingredients

  • 100g of fresh basil
  • 50g of almonds
  • 5g garlic very finely chopped
  • Salt and pepper
  • 20ml lemon juice
  • 10ml extra virgin olive oil

Method

  1. Blitz the basil, almonds and garlic in a blender
  2. Drizzle in olive oil until desired consistency
  3. Add lemon juice, salt and pepper to taste
  4. Serve with steamed veggies, salad or as a dressing

Hummus Dip

Ingredients

  • 100ml chickpeas drained and rinsed
  • 5ml tahini
  • 10ml olive oil
  • 3g ground cumin optional
  • Juice of half a lemon
  • 5ml of oil
  • Salt and pepper

Method

  1. Squeeze lemon
  2. Blitz all ingredients in a food processor

This recipe requires a little taste testing and adjusting, so if you like it lemony or less garlicky, alter to your taste. Also add a little more olive oil or water until you get the right consistency.

Avocado Salsa

Ingredients

  • ½ lemon juice
  • 50g avocado cubed
  • 50g tomato finely chopped
  • 30g red onion finely chopped
  • 4g chopped fresh coriander
  • Salt and pepper

Method

  1. Gently mix ingredients together and keep in fridge
  2. Serve with fish or as a side salad
