Apple Stack

Ingredients

  • 150g apple
  • 30g peanut butter

  • A few raisins

 

Method

  1. Slice an apple and spread a small amount of peanut butter.
  2. Sprinkle with optional extras. Can stack together for transport or eat as is.

Homemade Kale Chips

Ingredients

  • 100g curly kale
  • 10g olive oil spray
  • 20g sesame seeds – optional
  • 10g sea salt flakes – optional

Method

  1. Heat the oven and line a flat tray with baking paper.
  2. Wash the kale and spin or pat dry. Take out the thick stalks. (You can reserve the stalks for making soup on another occasion.)
  3. Break the kale into small pieces, spray lightly with olive oil and sprinkle with sesame seeds and sea salt.

Kale Chips are a great addition to a wrap!

  1. Bake in a hot oven for about 4 mins or until crispy. They cook fast so use a timer or stay close by!

Spicy Chickpeas

Ingredients

  • 1 x 400g tin of rinsed chickpeas
  • 10ml apple cider vinegar
  • 10g honey
  • 3g of smoked paprika
  • 3g ground cumin
  • 5g ground coriander
  • 5ml of ground chilli to taste
  • Salt
  • Pepper

Method

  1. Mix honey and vinegar together until dissolved.
  2. Add in spices to make a paste and then coat the chickpeas in the paste.
  3. Add to a medium fry pan and gently fry until the paste begins to caramelize and dry up. Watch carefully to make sure it doesn’t burn! (Consider serving with roast veggies or salad greens to create a meal.)

Homemade Baked Beans

Ingredients

  • 1 x 400g can red kidney beans, drained
  • 1 x 400g can crushed tomatoes
  • 5g garlic clove, crushed
  • 30g red onion, finely chopped
  • 30g tomato paste
  • 30ml of Worcestershire sauce
  • 10g of olive oil

Method

  1. Heat oil in saucepan over medium heat
  2. Add onion and cook until soft
  3. Add garlic and cook for another 2 minutes
  4. Add beans, tomatoes, tomato paste and Worcestershire sauce
  5. Stir until well combined and bring to a simmer
  6. Simmer on low heat for 20 minutes
  7. Serve beans on crunchy rye toast with a sprinkle of parmesan
